1 – Far breton with prunes

👩🏻‍🍳 Preparation time: 15 minutes
🥧 Cooking time: 50 minutes

What brings sailors back to port? Far breton, of course! Plain or with prunes, it’s a true emblem of our destination. Made with butter, sugar, eggs, flour and milk, it could be mistaken for a flan… Be careful! Never say that to a Breton. Here, the butter makes all the difference, giving the Far its dense, fluffy texture… Just the thought of it makes our mouths water.

Ingredients

  • 200 g flour
  • 40 prunes
  • 150 g sugar
  • 4 eggs
  • 3/4 l whole milk
  • 50 g semi-salted butter
  • 1 vanilla pod
  • 1 capful dark rum

2 – Kouign Amann

👩🏻‍🍳 Preparation time: 30 minutes
💤 Resting time: 2 hours
🥧 Baking time: 25 minutes

The prize for the most indulgent cake? It goes to the famous Kouign Amann without a doubt! Literally meaning “cake” and “butter”, it already sets the tone. And yes, this Breton pastry is made from bread dough, caramelized sugar and butter… folded into several layers to create this (very light) puff pastry. Our tip: enjoy it warm from the oven, with a scoop of vanilla ice cream. The perfect combination of fondant and crunchiness. ❤️

Ingredients

  • 250 g flour
  • 200 g salted butter
  • 200 g caster sugar
  • 10 g baker’s yeast
  • 10 cl water
  • 1 pinch fleur de sel

3 – Breton butter cake

🥧 Cooking time: 45 minutes

As you’ll have gathered by now, when it comes to butter in our house, we don’t use the back of the spoon… We even tend to add ladles of it. And that’s how the famous Breton butter cake was born! Made with butter (of course…) and eggs, it will delight the palate of any shortbread lover… And its melt-in-the-mouth texture is to die for!

Ingredients

  • 250 g butter
  • 250 g sugar
  • 375 g flour
  • 1 whole egg
  • 2 egg yolks (+1 for decoration)
  • 2 tablespoons Brittany rum or lambic* (optional)

4 – The Tréguier doughnut

🥧 Cooking time: 20 minutes

The Breton madeleine de Proust? The Tréguier doughnut! Reinette apples (not pommes d’api) are sublimated by a few drops of rum, which gives them that unique aroma… And incorporated into a doughnut batter baked in butter (again and again) it’s even better! Back to childhood in 3, 2, 1…

  • 3 tablespoons flour
  • 3 tablespoons caster sugar
  • 25 cl milk

5 – Salted butter caramel and mascarpone crepe cake

👩🏻‍🍳 Preparation time: 45 minutes

In Brittany, crêpes are a veritable institution. So much so, in fact, that it’s no secret that they can be turned into so many different things… and even into a fluffy cake! Perhaps the sky has finally fallen. The aim? Place pancakes on top of each other, separated by sweet mascarpone cream and salted butter caramel, until a cake forms. It’s like a dream…

Do you know Breton gwell? Also known as Laezh Teo, this traditional Breton specialty is actually fermented “coarse milk”, made with whole milk from Bretonne Pie Noir, Froment du Léon, Nantaise or Armoricaine cows. Our idea?
